We partner with top local distributors and purveyors to load our pies with the best California-sourced ingredients, pristine low-moisture cheeses, and robust Stanislaus 7/11 unpeeled ground tomatoes custom-blended with spices from the Oakland Spice Company.
The 48-Hour Crust: Our dough program runs on a strict 48-hour cold fermentation cycle using premium flours from Keith Giusto Baking Supplies. Baked directly on our oven stones, the crust finishes shatteringly crisp, airy, and digestively light.
